It may be a cliché, but it's for a reason: nothing feels as indulgent as being served breakfast in bed. With Mother's Day around the corner, we teamed up with our fave #MoseyDines guest, Amanda Maiorano – Adelaide-based dietitian, cook and food stylist – for the perfect breakfast in bed recipe.
Her Fluffy Waffles are super quick and fun for the kids to prepare, and can be topped with whatever is in the fridge. Delicious for Mother's Day, birthdays or all year round! Find the full recipe below.

Ingredients
170g plain flour (can be substituted for gluten free flour)
2 tsp baking powder
1 tsp cinnamon
200ml milk
2 eggs
2 tbsp maple syrup
1tsp vanilla extract
Method

Sift the flour into a large bowl and combine with baking powder and cinnamon

Add milk, egg, maple syrup and vanilla extract; whisk to combine, ensuring no lumps are present

Generously spray your waffle iron with olive oil, then pour in between 1/4 - 1/2 cup batter and cook according to the manufacturer’s directions. Repeat with remaining batter (storing the waffles on a wire rack)

Serve with your choice of toppings. Mandy opted for banana, yoghurt, walnuts and honey. Enjoy!
